Another ‘Recipe of the Week’ !! (A repost)

OK folks!  I know I’ve posted this one on my old space, but I made this again tonight and remembered just how good it was!  Plus, some of you are new friends, so here goes!!
 
This recipe is from a family cookbook.  My wonderful mother-in-law came up with it (she’s from Nebraska) and Mrs Serious and I just love it!!
 
 
 
CALIFORNIA CASSEROLE
 
 
 
You will need:
 
1  8oz. pkg. wide egg noodles
3/4 cup chopped onion
3/4 cup chopped bell pepper
1 lb ground beef/turkey
1 1lb can cream style corn
1 8oz. can tomato sauce
1 10oz. can tomato soup
1 8oz. can large pitted ripe olives, drained and sliced
1 4oz. jar pimentos, diced (optional)
1 1/2 tsp. salt;  1/2 tsp. pepper
1/2 tsp. chili powder
1/8 tsp. dry mustard
 
 
 
 
Cook noodles until tender. While you’re doing that, saute the onion and bell pepper in oil.  Add the ground beef/turkey and brown well.  Add the remaining ingredients to the meat mixture,
 
Combine the cooked noodles and meat mixture in a casserole and mix well.
 
Sprinkle with 1 cup of grated cheese.
 
Bake at 350 for 45 minutes, covered, then an additional 10 minutes uncovered.
 
Let cool for 5 minutes and enjoy!
 
 
Serves at leat 4!!  But the leftovers are heavenly!!!

    Woo hoo!  Dinner tomorrow, and I didn’t have to think of it!
    You have no idea how tiresome it gets, Bob, thinking, day after day after day after day of what to feed the family for dinner.  What’d we have this week, last week?  What will everyone eat?  Did we have too many ground beef/chicken/tomato sauce based recipes already this week?
