Becky Is Cooking And Baking!! WOOOO HOOOO!

She got a new recipe for Pumpkin Bread with raisons, Golden raisons and chopped walnuts.  With it, a cranberry cream cheese spread!!  OMG!!!!  Gave my gardeners a slice each and got three thumbs up!!  For dinner is Becky’s Mom’s delicious Chili Soup with Cornbread!!  The smell is killing me!!  I will post the Pumpkin Bread recipe today.
Yes, today was ‘Gardener Day’!  And as if my lawn wasn’t green and thick enough, they decided to feed it!

Here is the Pumpkin bread!  Too good!!

Here is the recipe:






2- 2/3 cup granulated sugar

1 can (15 oz.) can solid pack pumpkin

1 cup veg. oil

4 eggs

1 teaspoon vanilla


3 ½ cup all purpose flour

1-1/2 teaspoon cinnamon

1 teaspoon salt

1 teaspoon baking soda

¼ teaspoon ground cloves


1-1/2 cup course chopped walnuts

2/3 cup golden raisins

2/3 cup raisins

2/3 cup dried cranberries


In large bowl, beat sugar, pumpkin, oil, eggs and vanilla until well mixed.  Combine flour, spices and gradually beat into pumpkin mixture.  Fold in walnuts, raisins and cranberries.


Pour into *2 greased 9×5 loaf pans, bake at 350 for 60-70 minutes until toothpick comes out clean.  Cool 30 minutes and remove from pans to wire rack.


*  Fills 5-5 ½” x 3” pans. 

Bake in two shifts, 350 for 45 minutes.




1/2 cup dried cranberries

1-1/2 cup boiling water (or to cover)

1 – 8 oz.  package cream cheese – at room temperature

1/3 cup coarse chopped walnuts


Add boiling water to cranberries and  let stand for 5 minutes.  Drain and mix all together.


Try it!!  You will LOVE it!



  Weather here in SoCal is really nice!  65F, breezy and lots of sunshine!!  Ready for some rain.

    Nice green lawn, sunshine, good baking, Chili Soup with cornbread (sounds like heaven ….what more could one ask for)?

    Oh man that lawn makes me so jealous!  I’ve always dreamed of being a snow bird!  I had it all planned out in high school too.  The plan was to get my teaching degree then teach in the south come to Wy in the summer.  Like THAT ever happened LOL

    Thanks for the recipe Bob it looks great.. It sure is rich isnt it! I think I would have to use some tweaking in order to eat it.. too much oil for me… anyway. it looks yummy and I will save it for company!! : )  PS my lawn is white with snow by golly. it sure is!!!  : )

    Note to Caroldee (and any others who worry about the fat/oil content):  This really makes quite a bit.  If you break it down, it’s only 1.6 oz. per loaf (if you bake the 5 smaller one’s like I did), which works out to .025 oz. per slice (you can easily get 8 slices per loaf), which works out to about 1/4 of a tablespoon per slice.  Oh shut up, I don’t do math well and once you taste this you won’t care a bit!  Someone please make it and let me know if you think it’s worth it!  Remember, you only live once!  Crap, maybe wrong thing to say and someone is going to have a racing/high cholesteral level because of me.  I take everything back and remain neutral!  Hee Hee!
