Chicken and Dumplings

I woke up this morning and it was foggy and drizzling.  The first sign of Autunm here so Becky and I decided to have a cool weather meal for dinner.  After dicussing a few options  we settled on chicken and dumplings. Besides it being cool today, she also happens to make the BEST!!  These were the best of the best!  That meal was soooo good that I had to take a photo and brag on her a little.
 
 
She makes the drop-in style of dumplings rather than the rolled out kind.  All it took was a whole chicken, carrots, celery, onion, and frozen peas added at the end.  The chicken was simply browned, in pieces, as were the veggies until they were soft, and then simmered in about a quart of water or half and half water and canned chicken broth.  Removed the bones and skin and chopped it up.  Added the chicken along with the carrots, onion and celery and simmered it for an hour or so.
 
The dumplings were so easy!  2 cups of Bisquick mixed with about 3/4 cup of milk until it forms into a thick batter.  Then just drop golf ball sized spoonfuls into the pot and continue simmering for 10 minutes uncovered and another 10 minutes covered.  Add the peas during the last 10 minutes.  The dumplings will thicken up the broth.
 
There are fancier recipes but this one was darned good!  Leftovers tomorrow!

    That’s the way I make mine too except I don’t use a whole chicken. It is realllly yummy!! Great picture!! : )
